Brian Redzikowski is Executive Chef at Kettner Exchange in San Diego. Chef Redzikowski boasts an impressive culinary background. He attended The Culinary Institute of America on scholarship from Wine Spectator where he graduated with high honors; completed his externship at Le Cirque 2000 in New York City and staged at Alain Ducasse, and Le Bernardin. Brian also spent time at Nobu Matsuhisa in Aspen, Colorado, before taking on a sous chef role at the only three-star Michelin Restaurant in Las Vegas, Joel Robuchon at the Mansion—where he executed Chef Robuchon's signature tasting menus and traditional French Cuisine. Brian takes pride in having become a regular fixture at James Beard House dinners and Outstanding in the Field events. This year, he also took home the Cochon555 Los Angeles title of “Prince of Porc” for his creative and inspired dishes featuring heritage breed pork. His menu at Kettner Exchange is an expression of the best seasonal product available locally and nationally, accented by his passion for Asian cuisine—sparked by travels throughout Southeast Asia—and guided by classic French training.
