The Belvedere at the Peninsula Beverly Hills
As Executive Chef at The Peninsula Beverly Hills, David Codney oversees all aspects of the hotel's cuisine. Most recently, he was tasked with the tremendous undertaking of creating the new menu for the property's signature restaurant The Belvedere, which re-opened on January 19 as seafood-centric Mediterranean concept. His seasonally-driven menu focuses on locally sourced ingredients of the highest quality and features a large selection of sustainably caught seafood. Signature dishes such as Salt Cod Croquettes and Grass-fed Lamb Tagine are rustic and simply prepared to reflect Codney's firm belief in letting the produce shine.
Prior to joining The Peninsula Beverly Hills, Chef Codney spent many years of his career at The Ritz-Carlton, Naples, Florida, where he rose to the position of Executive Sous Chef and was a member of The Ritz-Carlton Task Force, successfully opening new Ritz-Carlton hotels throughout North America. When he is not cooking, Chef Codney enjoys picking apples with his five-year old twins to create his incredible house-made apple butter, or home brewing a delicious craft beer.
